Our Guji Grade 1 Guji Natural comes from Kayon Mountain Coffee Farm in the Shakiso district of the Guji Zone in the Oromia region, about 530 km from Addis Ababa. The farm is owned by families that were born and raised in the area and have 30 years of coffee experience. In the last several years Kayon Mountain Coffee Farm has focused on increasing quality in every area of the farm. The Kayon Mountain Coffee Farm enjoys ideal growing conditions in the shadows of evergreens that provide a multicanopy structure. The Shakiso regions’ volcanic soil is bursting with nutrients, creating a deep top-layer of soil and the regions’ high altitude, bi-modal rainfall pattern, and generally dry weather allow coffee cherries to develop slowly, progressively building in sweetness. In addition to coffee Kanyon Mountain grows many varieties of plants that help to maintain soil fertility.
Natural/dry processed = dried in the fruit on raised beds
In the cup, this lot from Kayon Mountain has a moderate but juicy body/mouthfeel, a honey-like sweetness with bright acidity, and an abundance of nuanced fruit notes.
